Recipe: Parsnip and Carrot Salad with Grapefruit
2 grapefruits, peel and pith removed, chopped
3 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar
1 teaspoon honey
Sea salt and pepper, to taste
3/4 pound parsnips, peeled
1/2 cup fresh cilantro leaves, chopped
3/4 pound carrots, peeled
- Grate parsnips and carrots, set aside in large bowl.
- Peel and segment grapefruit, reserve juice.
- Chop cilantro.
- Whisk together grapefruit juice, oil, vinegar, honey, salt and pepper.
- Add to carrots and parsnips and toss with cilantro and grapefruit segments.
